- Prepare of Ingredients for baingan coating masala :-.
- Prepare 3 of small to medium eggplants.
- You need 1/2 tsp of pisi lal mirch powder.
- You need 1/4 tsp of turmeric powder.
- You need 1/2 tsp of chaat masala.
- Prepare 1/4 tsp of salt.

- It's 1/2 tsp of pisa garam masala.
- It's 1/2 tbsp of Garlic paste.

Dahi Walay Baingan instructions
- Cut eggplants in circles and set aside.
- In a bowl add all the masala required for eggplant coating.
- Apply this masala on the cut eggplanr circles on one side only and set aside for 15 minutes.
- Now shallow fry the egg plant slices in oil as required until golden. Set aside on a plate.
- In a separate bowl add all the masala of the curry that is mentioned above.
- Make fresh tomato paste and fresh garlic paste also.
- Now slice an onion and add to a pot with oil and fry until golden. Add the masala of curry to it qnd garlic paste as well..

- Add tomato paste to onions.
- Cook until the gravy is thick qnd ol is separated. The more u cook on slow flame the better the taste would be.
- When the curry is fully cooked add to it the fried brinjal slices, coriander leaves and cover qnd cook on slow flame for 10 minutes without mixing much.
- Prepare yogurt dressing by mixing together togurt, garlic paste. salt and dhaniya powder.
- Now dish out the eggplant curry in a bowl and drizzle yogurt dressing over it and serve hot 😍.
