- Take an eggplant big size especially to make bharta.Wash and rinse well.Cut it in the centre just to check that there are no worms inside..

- Now take a kadhai place it on gas fire,switch on the fire on gas,heat well,then add oil.Once heated well add onion,green chilli, ginger. Roast it on medium to high flame for around 2 minutes,then let it cook on low flame.Stir in between and and.
