Ingredients of Baigan Masala

  1. Prepare 6 of small sized purple brinjal / baingan / eggplant.
  2. Prepare 3 tbsp of oil.
  3. It's 1/2 tsp of mustard seeds / rai.
  4. Prepare 1/4 tsp of methi / fenugreek seeds.
  5. It's Few of Curry leaves.
  6. It's 1 of onion, finely chopped.
  7. It's 1 cup of tamarind water.
  8. It's 1/2 tsp of jaggery / gud, optional.
  9. You need 2 tbsp of coriander leaves, finely chopped.
  10. It's For of ONION-TOMATO PASTE:.
  11. You need 2 tsp of oil.
  12. It's 1 of onion, thinly sliced.
  13. Prepare 1 tsp of ginger garlic paste.
  14. You need 1/2 tsp of turmeric powder / haldi.
  15. It's 1 of tomato, finely chopped.
  16. Prepare 1 tsp of coriander powder / daniya powder.
  17. Prepare 1/4 tsp of cumin powder / jeera powder.
  18. Prepare 1 tsp of kashmiri red chilli powder / lal mirch powder.
  19. You need 1/2 tsp of garam masala powder.
  20. You need to taste of salt.
  21. Prepare 2 tbsp of sesame seeds / til.
  22. You need 1/2 cup of coconut, fresh / desiccated / dry.
  23. You need 1/4 cup of peanuts / groundnuts, roasted & peeled.
  24. It's 1 tsp of kashmiri red chilli powder / lal mirch powder.
  25. You need to taste of salt.

Baigan Masala step by step

  1. Firstly, take the cut brinjal and stuff the prepared stuffing and fry on medium flame with 3 tbsp of oil..
  2. Cover and simmer for 2-4 minutes or till they are half cooked.further, take off and keep aside..
  3. Now in the same kadai add mustard seeds, methi and curry leaves. allow to splutter..
  4. Further add onions and saute well. also add prepared onion-tomato paste and continue to saute..
  5. Furthermore, place the stuffed and fried brinjals and pour tamarind wate add a piece of jaggery..
  6. Mix gently, cover and simmer for 5 minutes..
  7. Stir occasionally and cook till the brinjal gets cooked completely..
  8. Finally, serve baingan masala with chapathi or roti..
