  7. Prepare 1/4 tsp of Turmeric Powder (optional).

  1. Wash and make 2 slits on brinjal by keeping it's stem part intact. Apply some mustard oil on all over and roast on direct gas flame on medium flame. Keep rotating the brinjal so that it gets roasted on all sides. Remove the skin and mash the brinjal and keep aside..
  2. Similarly roast onion, tomato and garlic on direct flame, remove skin mash and keep aside. Finely chop the green chillies also..
  3. Heat up the mustard oil in kadhai on low flame. Add hing and then add mashed onion, finely chopped green chillies, mashed garlic cloves and cook for 2 to 3 mins. Add mashed tomatoes, turmeric powder and salt. Mix well and further cook for a minute. Add mashed brinjal, mix all well and cook for 2 minutes. Switch off the flame..
