Travancore Mutton Biryani instructions

  1. Each spice  prescribed in set 1 are ground to a  paste, separately  and kept aside.Now Saute the mustard seed in half cup of oil followed by half nos of cinnamon,clove and cardamon. Add the ground masala in set 1, one by one to the hot pan continuously stirring.Add enough salt, Now add the mutton marinated for 1 hour in salt pepper  and little curd.Finally add one cup curd to the above.When the mutton is fully cooked,add the cocunut,finely grated to the hot mutton and mix fully.Take out....
  2. Fry the rice in ghee with half the prescribed quantity of cinnamon,clove,cardamon.Boil water Add,the above,followed by pinch of salt and turmeric powder.when half cooked and the rice is soft,empty the contents to a strainer.Add the juice of one lime.Mix with the rice and let it cool.
  3. Pour the gravy of the mutton curry  into a  buttered baking tray.Spread the rice over it.Now   spread all the mutton pieces. Put a  thin layer of rice over it.Sprinkle  some rose water over it .Put the cashew nuts, kismiss,onions,fried in ghee,with little salt  Spread coriander leaves over the top layer.close the lid.Bake in low heat for 30 minutes.Take care to see that the stuff is not over dried  or over wet. The Yummy and soft Biryani is ready.
