Ingredients of Khas Mutton Biryani (Dehli style)
- You need 1 kg of Mutton.
- Prepare 750 gram of Basmati rice.
- It's of Onion paste 2 medium.
- It's 1 tbsp of Garlic Paste.
- Prepare 1 tbsp of Ginger Paste.
- It's 1 cup of Yoghurt.
- It's 1 tbsp of Green Chili paste.
- It's of Red chili 1 tsp or to taste.
- Prepare 1 tsp of Coriander powder.
- Prepare 1 cup of Ghee.
- It's of For stock (yakhni).
- Prepare 5-6 of Green Cardamom.
- It's Clove of 5.
- You need 8 of Whole black peppercorn.
- It's 1 stick of Cinnamon.
- You need of Bay leaf 2.
- Prepare 1 tsp of Salt.
- Prepare 1 tsp of Cumin seed.
- Prepare 1 liter of Water.
- It's of Spices to sprinkle on layers.
- Prepare 5 of Green Cardamom.
- You need 1/4 piece of Nutmeg.
- You need of Mace 2 small petals.
- You need of Make powder of all.
- You need of For steam (Dum ke liye).

It's something I loved eating as a child too. I love adding couple of Teaspoons of Ghee to my Biryani while marinating the meat and also at the end, which makes the Biryani even more good. I followed the same steps which I did for Chicken Biryani. This recipe is from last week's Thursday magazine.
Khas Mutton Biryani (Dehli style) step by step
- For stock: add water and above-mentioned ingredients with mutton and cook until meat is tender and stock remains 1 cup. Strain stock and take out mutton pieces..
- Boil rice with the ingredients mentioned above. They should b 3/4 done.
- In a pot, add ghee, add onion paste and cook until Color changes..
- Add ginger garlic paste, saute it and add mutton. Mix and cook it.
- Add green chili paste, red chili powder, salt coriander powder, mix it and add yoghurt. Add stock in it and cook it well. There must b stock type gravy in it.. don't dry the Masala..
- Spread rice over gravy, sprinkle spices over layer, sprinkle Brown onion and make next layers..
- In the end sprinkle saffron milk, and 1 tbsp of desi ghee, add some fried almonds and let them on steam for 15 minutes..
