- It's 4 lb of pork leg or shoulder.
- You need 1 tbsp of kosher salt.
- It's 1 tsp of freshly ground pepper.
- You need 1/2 tbsp of garlic powder.
- You need 1 tsp of smoked paprika.
- It's 1 tbsp of olive oil.
- Prepare 1 of onion (minced).
- Prepare 1 head of garlic (minced).
- You need 1 large of bell pepper (minced).
- It's 1 stalk of celary (minced) optional.
Stuffed Pork Leg instructions
- preheat oven to 230c.
- trim excess fat from leg, don't go too crazy its good to leave some fat for flavor..
- mix together all remaining ingredients (salt, pepper, onion, galic, etc,...) using the oil to bind it all together..
- using a fillet knife or some other thin bladed knife poke holes 3 to 4" apart about 2" deep and 1/2" wide. take about a tablespoon of the seasoning mixture and using your finger stuff it into the holes you poked. rub remaining seasoning all over the pork leg..
- place the pork leg into a roasting pan and cover securely with foil. place in the oven and bake for 11/2 hours covered then remove the cover and baked uncoverd an additional 15 mins or until brown. check with thermometer for doneness..
- remove from oven and let rest for 10 mins before carving..
- optional: add potatoes, squash, and carrots to baking pan before putting it in the oven. for a great roasted side dish..
