- Heat oil in a kadai.Add rye.Once they splutter,add curry leaves and finely sliced onions. Add pinch of salt,mix well and let the onions cook.
- Once the onions become translucent,add cut green chillies and ginger garlic paste.
- When the raw smell of the paste is gone,add finely chopped tomatoes.Make sure the tomatoes are more than onions.Add sugar and mix well.Let them cook.
- Meanwhile, in a blender,add the grated coconut,all the powders,salt as required and a cup of water and blend them.If you blend it really well,you don't need to strain it.
- Add this coconut mix to the masala and let it boil.Also check for salt content and add if required.Add water as required.
- Once the gravy starts boiling,add the eggs either full or cut into halves.Simmer the heat and close the lid for about a minute.
- Garnish with fresh coriander leaves.
