- Prepare 200 g of self raising flour.
- It's Half of a teaspoon of baking powder.
- You need 80 g of butter.
- Prepare 150 ml of milk.
- Prepare 1 of egg.
- It's Tablespoon of olive oil.
- It's 100 g of pancetta.
- It's 20 g of grated Parmesan.
- Prepare of Salt - optional.

- Mix flour and baking powder. Add butter and rub with fingers to get breadcrumb texture. Set a side.
- Cook pancetta, no oil, drain and set a side.
- Mix egg, milk and oil with a fork.
- Gently add egg mix until you get a sticky consistency. Add pancetta and Parmesan. Mix again.
- Lightly grease a muffin tray. Spoon mixture in evenly. Bake at 180 for about 20-25 mins. Check they're cooked using a fork, if it comes out clean, they're ready.

To use up the ingredients I decided to try making pancetta and parmesan scones. In a frying pan cook the pancetta until it goes crispy. In a jug beat the milk and the two eggs together and then add it to the mixture. With a wooden spoon pull the mixture together until it forms a soft dough. Fry the pancetta in a skillet to get nice and crispy and browned, then drain on a paper towel and cut into small pieces then set aside.
